I live in England but, as I've mentioned in another column, my wife is Australian.
 
As a child, she ate outdoors all the time even just for a regular weekday meal.
 
In fact, her father's job is a professional barbecue cook!
 
I asked my father-in-law for his top three BBQ tips:
  1. Heat your BBQ up for at least 10-15 minutes to get it nice and hot before putting meat on it. This will make sure that the meat is cooked properly and has that delicious barbecue flavour. 

  2. Spray oil onto the bbq to lubricate it. This will stop any food from sticking to the grill and also make it much easier to clean at the end.

  3. Don't cook under trees unless you want birds to grab your food or get up to other mischief.
He even gave me an easy bbq marinade that goes with most meat. 

Here's the simple recipe:

Mix a little of each of the following in a bowl until the taste suits you:
  • Garlic 
  • Chopped white onion
  • Red wine
  • BBQ sauce
  • Tomato ketchup
  • Orange juice
Put your favourite meat (e.g. beef, chicken, pork) in a plastic bag and add the marinade:
 
Leave it for three hours then cook on a hot barbecue.
