In the US, pumpkin pie is probably the most famous dessert eaten in October and November, but I actually like pumpkin cake better. When I was a child, my mom would sometimes buy pumpkin cake with cream cheese frosting from the local grocery store. She didn't buy it often, so eating it was very special. To me, this cake tasted like fall!
When I moved to Japan, I wanted to make pumpkin cake myself since I couldn't find it in local stores. However, I didn't have an oven in my apartment at first, so I baked a cake in my rice cooker! Surprisingly, it actually baked well, but it wasn't like the cake from my childhood.
Now, I have an oven and since it is kabocha season, I am excited to try making another cake! I hope I can try many different recipes so that I can find my favorite and save it. I think the recipe in this video will be the first one I try this fall.
