When I lived in Canada, I worked for more than 15 years in many different restaurants. 
Over those years, I learned so many incredible cooking styles and techniques from so many amazing people. Everything from cooking over woodfire for a few people to cooking for hundreds 200 people in massive hotel banquets!


After a while, my plating became like artwork. The plate is our canvas. We eat with our eyes as well as our mouths.



Every single piece became a piece of the puzzle. Beautiful and delicous. 

The restuarants that are my favourite that I have worked at is a small, homely wood fire restaurant that made me feel like I was part of a new family. Sadly, that restuarant doesn't exist anymore.
But, my other favourite restaurants in Vancouver do exist. The ones where I learned to paint on a plate. To bring art to all parts of the kitchen.
