This is so Rojak

Given the diversity of people in Malaysia, our food is often a result of cross-cultural influences. Take 'rojak', a popular treat cooked up on the Mamak stove. 'Mamak' is an informal term for the enterprising Indian-Muslim community in Malaysia.

Like our people, rojak or 'pasembur', as it's also known, has many variations. Typically, its ingredients include fresh julienned cucumber, turnips and blanched bean sprouts for a juicy and crunchy texture, cubed tofu which holds its shape well but crumbles into a savoury creaminess in the mouth  - sounds healthy?

Wait, there're also crispy fried prawn and coconut fritters - for layers of flavourful snap and crackle; juicy marinated fried cuttle fish and a boiled egg rolled in to put an end to any remaining hunger pangs. No rojak is complete without a drenching of a sweet savoury crunchy peanut sauce. The Malay term for this is 'banjir' which means 'flood'. We Malaysians mean it literally when we ask for 'kuah banjir' with our rojak. Flood the gravy!  Still healthy? Well, all things in moderation. What's life without the occasional explosions of flavours?

On the table, rojak is a treat for the palate. In Malaysian slang, it's also a term used to represent a situation made complicated by many factors. We'd say in exasperation, "Oh, this is so rojak!"** Can you tell why?

Rojak is extremely popular as a tea time snack but can be had as a main meal. It makes the walk to a street food stall an anticipatory one. Wash it down with a cendol dessert. Cendol? Ah.. that's an icy tale to be shared in the near future.

 

**In Malay, this would be, "Amboi, rojak betul!"


Postscript added on 8 Oct 2023: Note: Thank you to those who have written to let me know you enjoy reading my column but daren't take a lesson because there are parts you don't really understand. I assure you we'll always speak at a level which suits you so that we can enjoy a casual conversation. Also, we can go through words and sentences that are difficult so that we learn together. Perhaps, they will be easy then and we'll always have something to talk about. No stress!
